Wilhelm “Willi” Schwartzenstopp
Master butcher. Former Special Forces asset. Bavarian patriot. Sausage philosopher. Grew up in Bad Tölz, Bavaria — home of ski patrols, mountain schnapps, and the former home base of the 10th Special Forces Group. By age 14, Willi was delivering smoked meats to the barracks, teaching American soldiers how to pronounce leberwurst, and offering unsolicited advice on how to kill a man with a frozen bratwurst.
In 1985, an A-Detachment commander sponsored his U.S. immigration after Willi saved their entire team from food poisoning by throwing out a case of Polish “sausages” he deemed “unworthy of intestinal commitment.” He was paid in Merrell boots and a green beret he keeps framed in the smokehouse.
He chose Geronimo because, in his words: “The pigs are thick, the law is loose, and no one minds blood on an apron.”
Willi blesses the meat hooks every Christmas Eve with schnapps and a quote from Die Kunst des Krieges. He closes every day by playing Ride of the Valkyries and sharpening his cleavers. Rumors persist the smokehouse also contains a hidden safe, a Cold War radio, and a full-length portrait of JFK eating knockwurst.
